Strange behaviour - Empid

This empid fly was sitting "eating" on an apple. From time to time it lay some of its "food" on top of its scutum. Is this a normal behaviour for an empid? Can anyone explain what this fly is doing?

I have not seen or heared anything like this before. I know some flies get stuck with pollinaria or orchids and those may bother them. In that case they may try to rub them off. Still, if you saw it add pollen to the load on its thorax, well...
