I found some specimens in my collection with what looks like a white fungus. Does anyone recognise this and know the best course of action?

At some point (or perhaps still) the specimens were stored under too humid conditions. Keeping the dry enough will prevent spread. You might try to remove it using a fine brush or tip of a pin but if it is not spreading and still 'open' as on the picture, you might consider just leaving it there.
